My Mom’s entries for Strawberry Seduction: Strawberry Cheesecake and Pancakes w/Strawberry Compote

My mother has been a loyal reader of my blog since the beginning. Aside from enjoying seeing what I write about here and making sure that I’m eating well 😛 , I think one of her favorite parts of this blog are the many comments you leave for me, my loyal readers. She was interested in Strawberry Seduction when I first posted it, and so she has happily joined the fray with some entries of her own (along with a good number of you–the round-up of all of the entries should be my next post!)!

Nutella Crêpes w/Strawberry & Banana

Crepes were always a rare but special treat for me as a kid. When we’d go on family vacations, there would be a few places that we absolutely had to go to for breakfast so we could have crepes. As simple as they are, something about them is just always a delight, and so for breakfast (or a dessert), today we have nutella and fruit (strawberry and banana) filled crêpes.

Given how special crepes were to me as a kid, when I was much younger, my brother and I had tried to make crepes for my mother on Mother’s Day (fancy schmancy breakfast in bed–what more could you ask for? 😮 ). Of course, having no real knowledge of cooking and a box of pancake mix did not spell success–along with the fact that we didn’t notice that the box was about two years past expiration. Blueberry (or Cranberry) Muffins w/Hazelnut Streusel

Everybody loves muffins, whether it be the tops, the stumps, or the whole thing, and when I think muffins, I think blueberry muffins. Something about them is just comforting, warm, and inviting at any time of day. Whether it be a not-so-healthy breakfast or a mid-day snack, the fluffy, perfectly spiced muffins, sweet, oozing blueberries, and delicious, sweet and crunchy topping of these blueberry muffins are just there for you whenever you need a little something.

In searching for blueberry muffin recipes for inspiration, none of the batters really appealed to me. I instead decided to approach this like I would a cake, for in my mind, muffins are like cupcakes are like cakes, so there you have it. A great breakfast for a sleepy weekend morning that will always please a crowd: freshly made buttermilk pancakes.

I ate a lot of pancakes growing up, and while I don’t eat quite as many now (my average breakfast has shrunk a bit), they are still a nice occasional treat on the weekend (that and bacon…). Plus, if you’re entertaining and have company, this is a great way to prepare something fast and fresh when you’re still not entirely awake. Nobody will be the wiser as a tall stack of homemade pancakes will impress and hold the crowd over until lunch. 😉 Furthermore, you can even cater to each person’s individual tastes with whatever assortment of toppings you have handy, so you should even have your pickier eaters covered (because we all know that nobody would dare to eat a plain pancake!).
