I was just in NOLA about a week and a half ago and, sadly, couldn't find a decent plate of jambalaya if my life depended on it. It was very underseasoned and the rice was almost always a gummy mess. It was hugely disappointing.

I have my own standby recipe for jambalaya, but yours looks so nice I'm going to have to try it out for myself.

That looks really tasty! I have been wanting to get into Cajun/Creole cuisine for a while and jambalaya is near the top of the list to try.
