Simona -- its funny how such a simple side can be taken in so many different directions. I used to like baking my potatoes, slitting them open, and using it as a vessel for various salsas and hot sauce. In retrospect, the fact that a potato was even present was really irrelevant--it was all about the sauce :o

Pam -- I love feta also and used to use it all the time, but it never quite melts down which has always bugged me.

Scientist -- defniitely should try it! Just one of those simple side dishes to prepare that somehow goes with a really wide variety of dishes.

Kalyn -- thanks! Goat cheese is one of those miracle ingredients in my book...sort of like bacon. ;-)</description>
