Im glad that someone finally has a good recipe for a decent creole seasoning. Im a creole chef and I have been creating my own seasoning from various spices for the past 8 years. I have dabbled in a few different concoctions of my creole seasoning for the styles of food Im preparing (i.e. fish, chicken shellfish etc.) But I have found that red pepper is a MUST in the creation of a well-rounded and authentic creole taste.

Thanks.

P.S. You may want to also try a little of curry added into the mix also. It can add an aroma to the meal that you are preparing that is delectable.
